It wouldn’t be Christmas in the ONFORM Pilates studio without a piece of our amazing Christmas Biscotti! We have had heaps of requests…so here’s the recipes! Adapted by Bec’s mum, Rae.
We recommend doubling this. Great for gifts.
500g plain flour
300g caster sugar
1 tsp baking powder
Finely grated rind (optional) 1 orange & 1 lemon 1/2 tsp salt
1 tsp vanilla
1 cup cranberries
1 x 200g bag small Nestle baking “Choc. bits”
Heat oven 150 C
Combine flour, caster sugar, baking powder and salt plus rinds if using.
Add beaten eggs, vanilla, choc bits and cranberries. Mix to form sticky dough.
Divide into two logs
Place on baking trays lined with baking paper.
Bake 25 – 30 mins until pale gold and firm.
Allow to cool. Place in fridge for several hours or overnight. Slice while really cold into thin slices.
Lay on baking trays and return to oven 10 – 15 mins to dry. Cool on wire racks. Store in airtight container.
